TCI participated in the 17th Annual Chili Cook-Off
On October 11, the TCI Team competed in the business division at the 17th Annual Chili Cook-Off with their “White & Wild Chicken Chili.” Many attendees requested the recipe, so here it is:
1 lb. chicken, cooked and cubed (canned chicken also works well)
1 med. onion chopped
1 ½ tsp. garlic powder
1 tbsp. vegetable oil
2 cans (15.5 oz.) great northern beans, rinsed and drained
2 cans (4 oz.) chopped green chilies
1 tsp. salt
1 tsp. dried oregano
½ tsp. pepper
¼ tsp. cayenne pepper
1 cup (8 oz.) sour cream
½ cups whole cream (whipping)
1 can chicken broth
(Recipe makes ½ gallon and was provided by Michelle Richgels.)
